The estate

Our own groves, farmed by us for thirty years.

Victoria Olives is a grower first. We own and farm ca. 50 ha of olive groves at Orfanio, outside Kavala — land we have worked ourselves for more than thirty years — in a region where the groves run to the horizon and the Chalkidiki harvest is an hour away. We buy from growers in Chalkidiki, Central Greece and the Peloponnese as well, and handle more than 2.000 tonnes a year.

Fruit is picked by hand, fermented in brine and graded by calibre — the count of olives in a kilogram — before it is packed. We supply the trade only: every line is sold by the pallet, packed to an agreed specification and shipped under your brand or ours. There is no consumer shop. The essence of Greece is in every olive that leaves here.

How we work

Harvest, cure, grade, pack.

What a buyer pays for is consistency — the same calibre, the same firmness and the same drained weight in every carton, season after season. These four steps are what hold it.

Picked by hand

Chalkidiki fruit is harvested green, between mid-September and mid-October. Kalamon fruit is picked later, once it is fully ripe and black.

Fermented in brine

Chalkidiki olives are cured Spanish style. Kalamon olives are fermented in brine with no lye and no additives — the slower method the variety needs.

Graded by calibre

Fruit is sized to the published scale in pieces per kilogram, so the calibre you order in spring is the calibre that arrives in autumn.

Packed to specification

Brine strength, drained weight, headspace, lidding and lot coding are agreed in writing before the first production run.

A specification sheet is issued with every quotation, and every shipment leaves with its lot number and production date.

Calibration

From Atlas to Bullets

Greek table olives are traded by count, not by diameter: the number of olives in a kilogram of drained fruit. The lower the number, the larger the olive — from Atlas at around eighty to Bullets at close to four hundred.

Most of what we pack leaves Greece under someone else's name. We produce to your artwork and your specification, and handle coding and the legal declarations for your market.

Choose the line, the calibre and the format. We confirm drained weight, brine and shelf life in writing.

2 · Sample

We produce a pre-production sample against that specification for your approval, before any volume is committed.

3 · Label

Send print-ready artwork, or work from our template. We apply it and add the coding and declarations your market requires.

4 · Ship

Full pallets or full containers, built to the published palletising plan, with the documents your quality team files.
