Greek table olives are traded by count, not by diameter. The figure is the number of olives in one kilogram of drained fruit, so a low number means a large olive. These are the calibres we grade to.
Calibration
Atlas is the largest calibre we grade — around eighty olives to the kilogram, each one a mouthful. Bullets sit at the other end, close to four hundred to the kilogram, and are bought where the count per portion matters more than the size of each olive. Most retail jars fall between Colossal and Extra Large.
