The large, firm green olive of the Chalkidiki variety, with a high proportion of flesh to stone and a bright green to greenish-yellow skin. Mild and fresh on the palate, faintly bitter, with a clean finish that carries dressing and heat without collapsing. Picked by hand between mid-September and mid-October, then cured Spanish style.
